The session

What it’s about.

Krishnagiri district is tamarind country — the old trees line the roads around Bevu, and the pods end up in almost every kitchen here. This workshop, held in the Bevu farm kitchen, starts with the fruit itself: cracking pods, deseeding, soaking and straining pulp, and tasting how sweet, sour and aged tamarind differ. Then we cook — traditional dishes first, then a few that take tamarind somewhere new.

What you’ll do

  1. 1Meet the fruit: fresh pods, aged block tamarind, and how to make clean pulp at home
  2. 2Cook the classics: puli kuzhambu, puliyodarai (tamarind rice) and a pepper rasam
  3. 3Try the new: a tamarind–jaggery glaze, a tamarind chutney for snacks, and a chilled tamarind cooler
  4. 4Sit down together and eat what you made
