The session

What it’s about.

Café Tamarind is the café inside the 100-acre farm estate that Bevu is part of, run by the estate's farm-plot managers, Sanctity Ferme. This workshop, held in its kitchen, teaches the everyday cooking of Kerala — dishes built on coconut in all its forms, curry leaves, mustard seed and slow tempering. You'll cook a small spread together and finish by eating it the traditional way, on a banana leaf.

What you’ll do

  1. 1The Kerala pantry: fresh coconut, coconut milk and oil, curry leaves, and why it all works together
  2. 2Cook a set of dishes such as avial, a cabbage or bean thoran, and olan
  3. 3Learn appam batter and a vegetable stew to go with it
  4. 4Finish with a simple payasam and eat together on a banana leaf
